餃子の王将: The star is the tenshin chahan

Gyoza no Ohsho (餃子の王将) is a Japanese chain that specialises in Chinese cuisine. There are more than 600 branches in Japan, majority of which are clustered in Kyoto, Tokyo, and Osaka.

In Singapore, there is 1 branch at Orchard road. Most Singaporeans come here for the ramen. Personally I find the ramen ok, but a short walk takes you to Ippudo and other ramen places that serve better ramen.

The key reason why I visit Gyoza no Ohsho is the tenshin chahan (天津炒饭). This is undoubtedly the star here, but most people do not know about it because it is off-menu. This dish is a combination of 2 other dishes on the menu: tenshinhan (天津饭) and chahan (炒饭).

From the outside, tenshin chahan looks exactly like tenshinhan. The top is a crab meat omelette (crabstick meat in Singapore's case) and the dish is served with a generous helping of a thick, sweet, soy-based sauce.

Under the omelette, tenshin chahan uses chahan instead of the plain white rice of the tenshinhan. The chahan has ample wok hei, and that makes a lot of difference here.

The killer combination of omelette, chahan and sauce provides an explosion in the mouth that almost, but does not, overwhelm the tastebuds. I can easily polish off a plate without feeling jerlat at all.

I highly recommend ordering tenshin chahan if you have not tried it before. Who knows, you may love it as much as I do. And of course, one dish does not make a meal; the gyoza here is great (it is in their name after all) and you definitely should have some if you visit.

Some trivia to end off this post:

  1. Tenshinhan is named after the city of Tenshin (天津) in China. However, it does not originate from Tenshin and is a Japanese creation

  2. Tenshinhan is a character in Dragonball. Both him and Chiaotzu are named after Chinese food.

  3. Gyoza no Ohsho in Japan uses real crabmeat in the tenshinhan

  4. Gyoza no Ohsho is not to be confused with Osaka Ohsho
